Only the lowest speed worked and the lamps flickered with it. He replaced the speed control board and a heat damaged wire behind it. Every setting works now and the lights hold steady whatever the blower is doing.

What this place does to appliances
Older houses, older equipment
Mandarin is older than the St. Johns County developments immediately south of it. Much of the stock along the river side of San Jose Boulevard went up between the 1970s and the 1990s, and most of those kitchens have been remodelled once since.
Two things follow from that, and between them they describe most of our call sheet here.
The first is that a good share of the equipment in Mandarin is now over twenty years old. The second is that a lot of it was installed into a kitchen that already existed, rather than into a kitchen designed around it.
Twenty years is where an appliance splits in two
At that age the mechanical half and the electronic half stop ageing together.
The mechanical half ages well. Sealed burners, gas valves, hinge assemblies, door gaskets, spray arms, fan motors and thermostats are all still supplied for that generation and all still worth fitting. A late-1990s professional range with a tired hinge set and a drifted oven sensor is a straightforward repair with years left in it afterwards.
The electronic half does not. Control boards for older units go obsolete, get superseded to a version that needs a harness change, or stop being made. That is why on any older machine here we test the board first. There is no sense fitting several hundred dollars of mechanical parts to a unit whose board is unobtainable, and you deserve to know which situation you are in before you spend anything.
We will give you that answer straight. We are an independent shop with no sales floor, so there is nothing in it for us either way.
The wear items we actually replace here
Oven door hinges. The most common older-range repair we do. The springs settle, the door drops at the front edge, the gasket loses contact at the top and the oven starts losing heat out of that corner. Owners blame the thermostat. Hinges always go in as a pair, because replacing one side leaves the door pulling unevenly.
Valve feel. After two decades of heat cycles the high-temperature grease in a burner valve dries out. Knobs go gritty, then stiff, and a stiff valve gets forced, which is how stems get damaged. Serviceable valves can often be pulled, cleaned and re-greased rather than replaced.
Dishwasher door springs and cables. Twenty years of opening and closing frays a cable over its pulley. Both sides get replaced together so the door stays balanced, particularly on a panel-ready machine where the door is also carrying a cabinet front.
Door gaskets. Rubber hardens with age and heat. A gasket that no longer compresses at the corners costs heat on an oven and costs temperature stability on refrigeration, and it is one of the cheaper parts in the machine.
What a remodelled kitchen does to the visit
An appliance fitted during a remodel is usually sitting in an opening that was adapted to it rather than built for it. Filler strips on one or both sides, a countertop overhang that comes further forward than the appliance face, a gas run that was extended rather than replaced, or a supply line that is exactly long enough and no longer.
None of that is a fault. It just means getting the machine out is a slower, more careful job than it would be in a new build, and it has to be worked out on the day rather than assumed. We look at the installation before anything moves and tell you plainly what is involved, including when a cabinet fitter needs to be part of the plan.
The tree canopy
Mandarin’s heavy mature oak canopy is one of the reasons people live here and one of the reasons these kitchens see more short power interruptions than a treeless new development does. With about 68 thunderstorm days a year in this metro, a limb on a line during a summer storm is a routine event.
Control boards fail in the days afterwards rather than during, so the connection often gets missed. If your fault turned up in a storm week, tell us when you book, and consider a surge device at the panel — it protects every board in the kitchen for less than one of them costs to replace.

Usually yes. Burners, valves, igniters, hinges and thermostats are still supplied for most of that generation. The part that goes obsolete is the electronic control board, so on an older unit we test the board before quoting anything else.
